Ingredients for making Rabri Kheer
Rabri – 250 grams
Rice – 50 grams
Sugar – 100 grams
Cardamom powder – half teaspoon
Raisins – a little
Almonds – few
Cashew nuts – few
Milk – 1 liter
How to make Rabdi Kheer
Wash the rice thoroughly and soak it in water for half an hour. After this, remove the water and grind the rice coarsely. Put milk in a big pan and keep it to boil. When the milk comes to a boil, put the ground rice in it and mix it while stirring it well. Now keep stirring the milk every 1-2 minutes and keep the gas flame in medium. Cut cashews and almonds into fine pieces and prepare them. When the rice is cooked, milk and rice become one, then add chopped cashews, almonds and raisins to the kheer. Switch off the gas when the rice and dry fruits become soft and the kheer becomes thick.
Now put sugar in the kheer and mix cardamom powder as well. Keep the kheer covered for 2 to 3 minutes so that the sugar dissolves. After a while, open the lid and stir the kheer well once again. After the kheer cools down a bit, add rabri to it and mix. Kheer is ready. Take it out in a beautiful bowl. After this, garnish with finely chopped cashew-almonds and serve.
